We’re keen on PEACHES! One of the best things about summer season is the availability of fresh, juicy and delicious local fruit, such as the peach. In this issue we’re picking on the peach and showing you a few unusual recipes you may have not yet tried – have any of your own to share? Let us know and we’ll post them on our website, in our “recipes” section! [email protected] Grilled Blue Cheese & Peach Sandwiches The perfect combination! This recipe makes 2 delicious sandwiches. Ingredients • 4 slices whole wheat grainy bread • 2 peaches, pitted, thinly sliced (with skin on) • 1 tablespoon of honey • 1/4 Cup crumbled blue cheese • 4 thin slices of mozzarella cheese • softened butter – for spreading on bread Blue Cheese gives this Peach Sandwich a little extra ‘zing’ of flavour! Preparation Top 2 bread slices with mozzarella cheese, then 2 layers of peach slices, crumbled blue cheese and drizzle with honey. Top with another 2 layers of mozzarella cheese and then the other bread slices and butter the tops. Heat large & buttered fry pan over medium-low heat and grill sandwiches, turning once when golden brown and cheese is melted. Enjoy with a naturally infused peach & lemon sparkling water! Poached Vanilla Peach Halves For when you feel like something sweet but healthy. Ingredients • 1/4 Cup brown sugar • 1/2 Cup of water • 1/4 tsp. ground cinnamon • 1 tsp. vanilla extract • 2 ripe peaches, pitted and halved Preparation Mix together the sugar, water, cinnamon and vanilla extract. Put mixture in a shallow pan and heat on medium-low, stirring for a couple of minutes until the sugar is dissolved and mixture thickens slightly. Add peach halves upside down in the pan and poach about 3 minutes uncovered, then about 2 more minutes covered. Remove peaches and transfer to a dessert dish.
