Brussels-Style Belgian Waffles

ooking to have a fluffier and more flavourful waffle ? Use yeast ! Here ’ s a great recipe for homemade Brussels-style Belgian waffles that you will love ! But be prepared . These delicious waffles take a little bit more time to proof but are so worth the wait !
INGREDIENTS
• 3 cups warm milk
• 2 tbsp sugar
• 1 pkg active yeast
• 3 eggs ( yolks separated from the whites )
• 1 tsp vanilla
• 1 / 2 cup unsalted butter ( melted )
• 3 cups all-purpose flour
• pinch of salt
• powdered sugar and berries for garnish
INSTRUCTIONS
Place the warm milk , sugar , and yeast in a stand mixer and whisk until well combined . Let stand for 10 minutes until foamy . ( If using instant yeast , skip the yeast activation and proceed to the next step .)
Add the three egg yolks , vanilla , and butter and mix on medium speed until well blended .
Slowly add in the flour and salt and mix for 2 to 3 minutes at an increased speed until the batter is smooth .
Transfer the batter to a separate bowl .
In a clean mixer , whisk the egg whites on medium-high speed for 2 to 3 minutes or until stiff peaks have formed . Fold the egg whites into the waffle batter .
Cover and keep in a warm place for one hour or until the batter has doubled in size .
Spray the waffle iron with nonstick cooking spray , then add about 6 ounces of the batter and cook until the waffle is browned , about 2 to 3 minutes .
Continue until all the batter has been cooked and the waffles are no longer steaming . Serve the waffles dusted with powdered sugar and fresh berries .
